Hot Sauce Thread

I don't usually have trouble with my sauces being runny. I tend to use 1-2tbsp of honey per cup of vinegar which holds it together well.

Personally, i detest the use of xanthan gum in ice cream, and avoid using it elsewhere because of that.

Try an experiment with some corn starch/water, or guar gum.

I'd first try to make a flour/butter/garlic roux and start the hot sauce from there.
 
corn starch or arrowroot is better. Xan & guar have a horrible slimy mouth feel/texture.

Gelatine is good (especially pork) but doesn't like high acidity. Agar-agar (from seaweed) is the go for that. It can go quite rubbery though but it's good if you put it on hot foods, it will hold it's shape.

Hi pals. So I'm placing a bulk order soon for a new batch of sauces which I haven't tried before. Bumping this thread to see if anyone has new recommendations not mentioned here yet.

hey sashimedickface you should list all the stuff people have already mentioned

put it along with your recommendations (cut and paste so people can see your progression to sauces) in first page

Didn't read the whole thread but the Arizona Gunslinger line of hot sauces are delicious.

Is my personal favorite but I like all of the ones I've tried. The habanero is good if you want some extra heat.
 
Wow, how did I miss this yesterday?

Mad dog 357 has a weird after taste. But a drop at a time in soup or pasta adds heat. Da Bomb will always get people in the 8th spot, it tastes good. A few drops and it really kicks in. That's why everyone on the show gets messed up when they reach that sauce. I'll have to try Dawson's, Karma, and Hamajang. They didn't tell the scoville levels in that video. Really depends on how hot Dawson's is. Just watched a review and it appears to be about 6/10, so Da Bomb will continue to be the big step up. Like the 1st three sauces are easy, the next 4 are medium, then Da Bomb hits them.

So let's see, out of the sauces on season 5, I've already been through a bottle of The Last Dab (TLD), it tastes good. Have Mad Dog 357 right now, use it for heat but the taste is weird. Almost done with my bottle of Da Bomb. I'll have to try Dawson's, Karma, and Hamajang.

What I like to do take a jar of ranch dressing, put half into an empty jar, add half a green salsa jar, and drops of hot sauce. That's my kicked up salad dressing. If it's soup or pasta then I put drops of hot sauce in directly. Soup is the hardest to eat once a few drops have been added, because the heat level never goes away.

My compilation of sauces tried so far with my notes on each

-Tapatio adds a very slight hotness, very mild
-Frank's, same as Tapatio but with a little bit more of a kick
-Gringo Bandito, small bit of hot with a slight smokyness that overtakes the hot taste
-Trappey's Bull, recommended by LouCypher, has a very similar taste to Tabasco but overall better tasting.
-Hot Ones, the sauce from the YouTube channel Goshin posted (https://www.youtube.com/channel/UCPD...pmmeQcbe2kpPaA)
This sauce actually has the best overall taste from any sauce I've had. It is pretty hot overall, but the actual taste of it makes the hotness worth it. My favorite so far.
-313 Foodie Sauce, I saw this one when ordering the Hot Ones and decided to grab it. It is by far the hottest I've tried, but still has a solid taste.

Habanero Mango: B+
Chipotle Slam: B-
Wasabi Green Tea: F (close to being trashed with Dave's roasted garlic)

Random:
Cholula Chili Lime: A
Dawson's Original Hot: A-
Trappey's Bull: B+
Sriracha: C
Frank's Original: B+
Hot Ones: A+
After taste testing all of these across multiple foods, these are the rankings I have personally made. They are judged based off taste, not hotness. Dave's Insanity sauce is good if you're in a dick measuring contest. The rest of these sauces are good for everyday use.

Hot Ones, no they're not paying me, is still the absolute best tasting hot sauce I've had across all of my tests. I may be slightly biased towards citrus hot sauces now that I look at my rankings. To each their own however.

Secret Aardvark: B+
Taste is good, spice is there, just a bit too "habanero-ey" tasting for me to put it on some meals I found. Used half the bottle in a week though, so it's definitely worth a purchase.

Pain 100%: A-
Not as hot as I thought it would be. Has a very similar taste to Frank's Red Hot with a lot more kick which is something I've wanted for a long time. If you're familiar with Domino's Kicker Hot Sauce or Frank's and want some more spice in your life, this is the one I'd recommend.

Bravado Pineapple and Habanero: Very sweet of course, with some kick. More mild than Hot Ones imo.

Scotch Bonnet: My least favorite sauce out of the bunch. Has a kick to it, but the taste of it just wasn't working for me.

Tiger Sauce: Bought a 5pk of this on accident on Amazon. I must say, it's pretty good on about anything. Not particularly hot, but has its place on many meals if you want to add a little kick.

Ghost Pepper & Blueberry: This is my new favorite sauce, taking over Hot Ones. I have cravings for this. The amount of sweetness from the Blueberries and the amount of hot from the ghost peppers is matched perfectly. Love this sauce.

Trader Joe's Habanero: Loved this one as well. It is now my favorite habanero sauce out of the mix.

I highly recommend the Bravado Ghost Pepper & Blueberry out of all the sauces I've tried. It is super tasty on wings. Warning: will turn everything it touches blue.

I just wanted to consolidate all my previous reviews into one post. Thank you for the recent replies, I will add them to my next order.
 
@NGFM, I highly do recommend Dawson's. I ordered it by itself when it was on sale and it was fucking great. It's the best "ramp" up sauce as far as the show goes that I think they could've had. The best "hot to taste" ratio I found around that range.

I've read reviews saying Ghost Pepper/Blueberry isnt very hot. I like the extra heat from ghost peppers so I am wondering if I would be disappointed

It's definitely hot, but not the same type of level you'd expect from a sauce with the name ghost pepper in it. I've had hotter habanero based sauces, but the taste is what brings me back to the blueberry combo.
