I use a priest. It's a heavy brass weight on the end of a little stick.
Knocks em dead right off.
Either that or an Ike Jime spike to the brain, I have a sharpened oyster knife I use for that.
Some recommend just cutting the gills open and slicing the main arteries while leaving the windpipe intact so the fish pumps it's blood out really quickly, then asphyxiates. I find that a bit too Asian and brutal.
After that if you want to get real fancy you then shove piano wire or thick nylon line up their spine to kill the nerves.
