What are you cooking for dinner tonight?

I had some corn bead type stuff (dont know the real name, my mom always made it) and BBQ beans. Fancy dinner i know, i'll probably end up eating again before i go to sleep
 
I made baby back ribs. Normally I cook them at 275F for 4 hours. But I lost tack of time and they stayed in another hour and a half...edible but not so good.
 
Last night I ended up just making a sandwich, but tonight I made Pad Thai, and it was awesome. I'm gonna do it a little bit different next time but here are the ingredients:

8 ounces dried wide rice noodles
1/4 cup fish sauce (nam pla)
4 tablespoons tamarind juice
2.5 tablespoons sugar
3 tablespoons peanut oil
1 pound large shrimp, peeled with tails on
5 garlic cloves, finely chopped
3 shallots, sliced
1 fresh red chile, sliced
2 large eggs, lightly beaten
1.5 cups fresh bean sprouts
3/4 cup chopped unsalted roasted peanuts
1 lime, cut into small wedges
1/2 cup fresh cilantro leaves

That should be enough for 3 people.
 
shrimp and pepper stuff.

Basically you take some peppers, chop them up and sauté them with onions and mushrooms till everything is soft, add whole shrimp and cook till done, add cream and reduce, good over rice or by itself. If you're from up north, replace the peppers with marshmallows. Pussies.

My gf makes dinner, it was teriyaki chicken and rice and it was good. I just kind of sit down and eventually dinner arrives, it is a good way to live.
