i have quite a few house guests and don't mind going through the trouble since i am habitually waking up much earlier than most people that are here. thanks!
 
not quite sure what a brunch recipe is

i mean, eating before lunch but after breakfast is brunch right, so you want a breakfast recipe and a lunch recipe so you can make both? I might not understand brunch fully.
 
spray a muffin pan - cut ham to fit in pan as a cup

make a mushroom duxelle (garlic shallot mushroom fine dice) cook until almost dry and put some in the ham cup

crack an egg into each cup and bake
 
Eggs, over easy

Hash Browns (or even Hash Blacks, if you cook like my mom did)

Bloody Maries all around (hey, it's new years)

that sounds awesome. i'm gonna try that

would shaved ham work? just lay the shaved piece in the "muffin hole"?

if the ham is really thin then you may want to put in 2 pieces. you just want it to be able to "set"
