i mean…he explains it…in a monologueI watched it. Great acting. I just didn't get the motivation of the Chef or his assistants.

Spoileryou have this genius chef that went insane for his art, and after all the absurd things, you find put he has like this irrational hatred for the smore…so much so he bases his entire suicide grand finale as a fuck you to the smore…i couldnt stop laughing
SpoilerI was more confused as to why as shit went down the guests were more and more determined to escape yet at the last course they apparently all came down with stockholm syndrome and were ok being prepped into a fiery death

edit:SpoilerI thought the margot thing was more that she wasn't supposed to be there which f'ed up his ability to serve the "perfect" dinner catered to each guest, ie the taco shells with intimate details of each person's indiscretions and that threw his need for perfection into chaos

Spoilerit was also the fact that her date brought her there, knowing they would all die.
I kind of get the chef's hatred of his customers angle, but not his whole staff going along with it.
It was an entertaining movie nonetheless.
