[So] Why does ice cream get hard as a rock the day after you open it?

You bring the ice cream home from the store where it's been in a freezer for god knows how long and it's easy to scoop out. Put in your freezer. The next day you try to scoop it, it is as hard as a fucking rock. Why TW?!?!?

I'm guessing it has something to do with the moisture in the icecream freezing, where when you 1st buy it, its usually sealed air tight...
 
Part of it is the coldness of your freezer but like sure is saying a lot of it is based on excess moisture and air being allowed to seep into the ice cream causing more freezing.

I think this is correct. Additional I would posit that once you unseal the carton, the moisture that is already inside is exposed to an ice crystal at some point. This acts as a seed causing the remaining moisture to begin crystalizing.

Just a guess though.
