Blackened Cajun...yeah - it can be done.
Blackened chicken is not overcooked. It's blackened on the outside using blackening seasonings and a super hot pan that chars the outside while the inside remains moist and perfectly cooked.

Chicken can also be blackened by broiling it on Hi in an oven, but you have to turn it every 5 min. or so.

No No...here's the thing...
It has to be almost raw. It's fucking tricky and kind of hard to explain.
you have to cook it about 3/4 of the way and let the lime/lemon juice cook it the rest of the way.
