Everyone likes what they like.
Because I'm stupid and have no idea about cooking, every time I want to make a new dish, I throw *dish* and then Marco Pierrie White, Gordon Ramsey into the Google machine and see what comes up.
What those guys say, is that cooking with extra virgin olive is a misstep, as it burns too fast. So like, if you're doing say, mushrooms on toast, is you sauté the mushrooms in olive oil, and then dress it with extra virgin.
