If the game just uses low res textures, but all modern everything else and it's this size, does that mean most of game files these days are just textures?

Yes.
The bulk of modern install sizes are media assets.
The actual code to run the game is relatively moderate, it's all the motion captured, fully voice acted, 4k "HD" that usually bloats the installed foot print of your average game.
Procedural Generated Content is very efficient, when done properly, at keeping the amount of raw data low because it creates it dynamically, rather than relying on assets that had to be per-generated and saved on disk.
The game is early access... so the Developer may plan on going back and improving the visual fidelity of basic assets to increase visual fidelity at some point in the future. For now, it's just good to get things working in a playable game.

It's annoying how large some games are these days. Im not really wowed by graphics all that much anymore, and I think fewer people have been over the years. Unless a game is going for realism like L.A. Noir, Id much rather have basic graphics with nice art direction.
I'm surprised people don't like this game's graphics as much as I thought. It's low res as a throwback. Tons of indi games are doing it now. The bosses look nice, and the weather effects are a nice touch.
They had an update map. The first is called Home and Hearth, so I think it will be a lot of decorative stuff and base building stuff. After that it seems like there will be new areas and what not. I think 2 unfinished biomes can be seen in the game, although I have not seem them myself.
I have so much money to spend at the merchant but still have not found him. He spawns in the black forest but you don't know which one.

Well... when you consider how many AAA games these days are basically 6-8 hour long movies interrupted by bits of actually practical gameplay...
The publisher, Coffee Stain, is also responsible for another very popular game Deep Rock Galactic. Again, reinforcing the argument that you don't need a 45 minute "Hollywood" cutscene to make a game interesting. DRG is also a very small game, with a cell shaded illustrated look to its art style, but uses Procedural Generation and well grounded gameplay to create hundreds of hours of content that I have played without getting bored of it.
Big flashy set-piece visuals driving a big budget soap opera narrative sells product... harder to appreciate the novelty of solid, reliable gameplay mechanics from a screen cap or video clip without actually playing the game.

I haven't really been "farming".. I have the beehives there which spit out honey to eat or for mead, and I've made the cultivator so I can plant seeds... That means I can take pine cones and plant them and so have pine trees (and hence core wood) in a meadows biome. Haven't seen how sustainable that is just yet though.
I found some carrot seeds and planted them too, but I hadn't fenced anything and they've disappeared, I suspect some deer got them.

Yep, they drop when you're cutting down trees (birch/fir/pine - no beech & no oak from what I've seen, so you can't get fine wood that way), and you can also pick up carrot seeds in the black forest (look for a big white flower).
I think that's all you can plant - for the moment, at any rate.

Meh, little bit here, little bit there... As you can probably see, it's kinda been an evolutionary thing.
Total playtime in the game's 22 hours now, with fair chunks of that AFK with it in the background.

I bought the game and enjoy it I beat the first boss. I recommend. The survival mechanics aren't in your face every minute if you wanna build and chill you can do it relatively safely in the safer zones.
