u gotta admit dishes w/ bones r pretty stupid tho it's like that asinine thing when restaurants leave shrimp tails on or make clam pizza that looks like this
The marrow adds flavor to the sauce, and keeps meat from drying out. That clam pizza looks a bit silly but at least you know they opened up (good clam) instead of staying closed.
