Sheetrock/Gyprock/etc are brand names.
Gypsum board describes a sheet product that is 90% of the market. It has a primarily gypsum core inside two paper layers but you can also get board without any gypsum. others use fiberglass instead of paper and there is also a cement board that has no skin at all.
So 'drywall' is the catch all term that anyone without a bazooka can use and not be a noob.
