Give me tips for my Crock Pot Chicken Veggie Soup

I'm about to make some chicken+vegetable soup in the crockpot. I've done it a few times before and it turns out okay, but it lacks that special something that makes it great.

Here's whats going in so far:
-baby carrots
-red potatoes
-celery
-onion
-green beans
-maybe some canned peas
-chicken breast
-some chicken boullion or I also have a can of swansons chicken broth
-some water
-maybe some canned cream of mushroom or cream of chicken soup?
-for spices I would usually put in salt, pepper and minced garlic

I basically dump all the veggies and liquid in, cook it for maybe 5 hours, then cook the chicken on the stove, cut it up into chunks, then dump that into the crock pot and finish crocking for another 30 min or hour

Help me take this up a notch
 
Find some high quality veggy bullion to start off with, it really helps out the broth.

And if you really like garlic try elephant garlic, my state gets shit garlic this time of year and half of the regular stuff is rotten before its bought.

If you like/want some filler, you can add rice or noodles at the very end (if you add too early you will turn your soup to delicious jelly).

If you need to skim fat from the top before you dish the soup out, use a couple ice cubes to run over the surface of the soup so you skim fat as it thickens and sticks to the ice.
