almonds in pesto

why don't you have a rice cooker GIGArfool

good question

i have been meaning to get one for a while

i am really good at making rice in a pot without fucking it up or having any stick

but she likes to 'set it and forget it' which works great in a rice cooker but not with a pot which i usually end up cleaning

so i'll probably get one this weekend
 
honestly there is plenty of room, especially now that i have the giant maple board to bridge the gap between the stove and the counter.

what i really need a rice cooker for is to cut down on the numbers of burners i have to use when making dinner so the kitchen doesn't get so hot. 5 days a week of a 120 degree kitchen is plenty.
 
Actually, almonds in pesto isn't that uncommon- I've had it in Italy as well as a few times here in the US. Either blanch or toast them first, and use a bit less in weight than you would use of pine nuts. Oh, and I would chop the almonds fine first in the food processor then add your other ingredients.
