[HOW-TO] Smoked Tri-tip on a Gas Grille

For Fathers Day, I'm getting a new grille, so I wanted to break it in with some of my tri-tip. Having recently relocated to the upper Mid-West, I had a hard time even finding this cut. When I did, I paid $8.99/lb for non-frozen tri-tip, and it took me some time to talk him down a buck, as he wanted $9.99/lb originally.

2 tri-tips came to just over $51.00.

I wish it were indeed "cheap meat" outside of California.
