id give them some sort of coating, like cornmeal, bread crumbs, etc.
another thing you can do is put a rack on a tray/roasting pan and elevate the chicken, esp if there is a coating on it. dry heat + air movement = crispy.
I made Chicken Adobo using Mark Bittmans recipe from 'How to Cook Everything' iphone app - and it was awesome....I didn't grill it, instead used the oven (and used low sodium soy sauce so didn't have the salty issue)
