beach camping over the week i gathered 16 giant clams. had em each night with dinner and brought 5 home to make a clam chowder.
so here you go.
shuck clams saving all the juice from inside.
clean the meat as it has sand in it(unless you let it filter it out for a day or so) remove the bile and roe looking crap.
chop up the meat into small pieces.
make a pico with onions, lime,cilantro, Serrano pepper, salt and pepper and tomatoes.
cube up some mozzarella cheese.
place meat back into the shell.
pour a spoonful of the juice you saved into each shell.
place pico on top of clam meat
place cheese on top of pico.
close and wrap in tin foil and BBQ for about 10 mins.
when the cheese is melted you are good to go.
