mushroom stew

made this last night...easy to make and delicious

2 onions diced
2 carrots diced
1 celery stalk diced
2 oz porcini mushrooms
1 lbs regular mushrooms, sliced
handful of dill
2 tbsp butter
1 tbsp olive oil or whatever
1 qt veg stock
4 cloves garlic

dumplings to cook on top:
3/4 cup self-rising flour
1/2 teaspoon english mustard powder
1/4 cup veg shortening
1 tbsp chopped dill + chives

put the porcini muchrooms in 1 cup hot water and soak for 30 minutes...take mushrooms out of water, but keep the water (strain through coffee filter to get rid of grit that may be left over)

heat oil + butter until melted, add onions and cook until soft and golden over medium heat (probably about 10-15 mins)

add carrots, celery cook until soft - like 5-10 minutes

increase heat to medium-high and add the sliced regular mushrooms - stir until they release moisture..then add the porcini mushrooms and garlic, saute for about a minute or so.
stir in the saved mushroom liquid (yes gross). add salt + pepper and simmer for 15 minutes

while this is happening, make dumplings:
sift flour w mustard and then mix in the shortening and chopped herbs using a whisk. season with salt + pepper. mix in 5-6 tbsp of cold water to form a soft sticky dough. dust your hands with flour and make a bunch of small balls of dough.

after the 15 minutes of simmering time are up, add more salt and pepper if needed, then put the dumpling dough into the stew and cover - simmering for another 15 minutes (until dough is cooked)
