a friend at a local deli sliced a bunch of it up for me

i'm not sure how much the original piece weighed (it was probably close to 6-7 pounds), but i ended up with 4 sliced packs of 1 pound each and a 2 pound uncut chunk. not too much loss at all.

i let her keep some to say thanks for cutting it up

arent the cheeks supposed to be really good

and what about pig tongue? good as cow tongue?

cheeks make guanciale, the classic ingredient in carbonara. also on my list.

or you can smoke them for jowl bacon

Computer took a **** so no pics for a while, but i ended up doing a few things, one of which was the obligatory headcheese with homemade mustard.

smoked jowls, pickling a tongue, and did some rillettes. cracked at least 3 tongue in cheek jokes, and chased a waitress around with a tongue.
