Recipe: Roasted Garlic and Pepper Tomato Rotini w/ Chicken

Roasted Garlic and Pepper spice
Fresh Garlic
Tomato Sauce
White Onion
Salt n Pepper
Sambal Oelek
Olive Oil

One of the sous chef's at the restaurant I work at ordered in a Roasted Garlic and Pepper spice by accident the other day. Having no use for it in the restaurant, I decided to bring it on home, it certainly smelled good, I was sure I could find a use for it. My first thought for it was a pasta salad, which I still believe would be an excellent idea, however I decided on going with a hot pasta dish instead as that's what struck me when I started getting hungry last night.

Not wanting to spend too much money, I already had some tomato sauce, and rotini around the house. Of course the free Rst Garlic and Pepper spice, so all I really needed was a protein (optional I suppose, but not for me, mmmm protein), and some veggies. I decided to go with some mushrooms, onion and a little bokchoy for some color.

This is a super simple pasta that can be thrown together in under a 1/2 hour. Just remember, there's only one rule to cooking, there are no rules. Trial and Error are what its all about, mixing and matching flavours to find something that strikes your palette as tasty. Throw in your favorite protein, vegetables, and some herbs/spices and you got yourself a tasty meal just waiting to be shared.

Once I got home with all my ingredients, first thing I did was wash up.

Double check to make sure I've got everything, yup!

Lets get our water for the pasta on the stove, always remember to add a liberal amount of salt to your pasta water, you'll be amazed at the difference it makes in flavor.

Alright, as per usual, I'm going to process all the fresh produce first, so as to avoid any cross contamination with the raw chicken that I will be cutting next.

Alright, now lets slice up the chicken. I'm just going to keep it simple and use very thin slices, nice thin pieces of white chicken will look great in the presentation.

Add a little olive oil to the pan, and let it heat up until its smoking. Always preheat your pans, it will help prevent your proteins from sticking to the pan, and will give you moist chicken by searing in the juices.

Toss in some of the Rst Garlic and Pepper spice, as well as a little Sambal Oelek for spiceyness. Look at that beautiful color from the spices.

Once the chicken is cooked 60-70%, add in all your vegetables and let them cook down until soft, your chicken should finish cooking through during this time.

Add in your sauce, be it tomato or cream, and let it get nice and hot while you drain your Al Dente pasta.
Side Note: Al Dente is an italian term most commonly used when describing pasta, and less common with rice, meaning 'to the bite.' It refers to an edible pasta that is still firm and crisp.

Once I had drained my pasta, I added a little olive oil and a sprinkling of the Rst Garlic and Pepper spice to it.

Slice up a few pieces of french bread, place your Al Dente noodles onto the place and cover them in your flavorful sauce. Top with a little parmesan (fresh if you have it $$$), and it's time to eat!

They are just the old school Miracle Blade III knife set you used to see advertised on late night TV... not horrible knives by any means, they get the job done, but do yourself a favor and just go pick up a decent 10-12" Chef Knife, will replace the entire set, and do every job better.
