I make some sick tilapia paupiettes at work yesterday for a dinner special. Veloute and Fumet made from scratch, was selling like hotcakes, then my ****ing incompetent boss knocked over the hotel pan i had all my paupiettes sitting in. And he didn't even admit to doing it... i ****ing hate that prick. Anyway, if anyone is curious to the recipe ask me.

home made chicken, jalepano, and pineapple pizza.

blacken a chicken breast, chop into small cubes.
Jalepanos.
Fresh-cut pineapple.
marinara sauce (tomato sauce, basil, oregano, sage, pepper)
Mozzerella cheese. lots.
pizza dough

hot date

bake at 350 until crust is brown and cheese is bubbly. eat. get laid. win.

gnocchi with meat sauce and cheese

the gnocchi:
2 pounds of pealed potatoes
1 and a 1/4 cups of flour
a small pinch of salt

rather than boiling the potatoes you should steam them, just put the potatoes on a colander and set the colander in a spaghetti pan, fill the pan just below the colander. set the pan to boil(covered). this should take somewhere from 35-35 minutes. peel them and mash them before they become too cold. salt them and start, slowly, to add the flour until you get a smooth, somewhat firm non-sticky dough.

roll the dough into a rope as thick as your finger. cut the rope in one inch pieces. boil the gnocchi in water with a lot of salt. remove them from the pan with a spoon with holes(don't know what they're called) about 90 seconds after they start floating. drain them very well.

the meat sauce:
1/4 pound of steak cut into chunks(about half the size of the gnocchi)
1/2 table spoon of olive oil
1/2 medium onion, chopped into very small pieces
1 and a 1/2 table spoons of tomato paste
1 tomato, chopped into very small pieces
1/6 cup red wine
1/2 table spoon of salt
1/2 table spoon of tabasco

medium heat phase
heat the oil for about a minute, add the diced onion. cook till it's soft, should take about 7 minutes.

mid-high heat phase
add the chunks of meat and stir em a bit every now and again for about 8 minutes. add the tomato paste and stir for 2 minutes.

low heat phase
add the diced tomato, salt, wine and tabasco. stir it for about 30 minutes until it boils.

the final plate:

get a glass pan(don't know what they're called) and put a very thin coat of the sauce on it, then cover it with the gnocchi and cover it with the rest of the sauce. now put shredded cheese on top of it all and take it to the oven until the cheese starts to melt. and it's finally done!

should look something like this
