Sauces? I got one

Just made a great steak sauce.
Melt 3 tablespoons butter
Add in 3 tbls flour and make a roux
add in 1 diced onion and allow the onion to soften
add 8 oz sliced mushrooms and allow to soften and wilt
add in 1 cup of wine slowly allowing the liquid to be incorporated into the roux
add in 2 cups of beefstock again allowing the liquid to be incorporated
salt and pepper to taste and reduce to desired consistency

pour over a nice top sirloin or london broil any steak would work but I like london broil since you slice them and they have more surface area to absorb the sauce. sop it up with a nice bland starch like rice, bread or mashed potatoes.

Add some sea salt & pepper to that, and now we're talking.

make a home made veal stock from scratch and use shallots instead of onion. Add butter at the very and now were talking.oh and i like alot of wine in my sauce so i would do a 1:1 ratio of wine to stock. I would reduce the wine by half before adding the stock.
