I found a few generic brat recipes, but I wanted to add green peppers, onion , garlic to them. Should I just chop them up fine and add them before stuffing. Or sweat them a bit then strain them and mix with the dry spices. Or just run them through the grinder raw with the meat. Any thoughts?

I havent made home made sausage since culinary school but we always put it through the Hobart with the meat

cool i think that's what i will do ,just dice it fine and mix it up with the cubes before grinding

I'd mince them, or chop them fairly fine and add them to the meat after grinding and mix really really well by hand after
of course doing it the other way should be great too :D

They came out great. Second best I've ever had. Lot of work though, and you really need a good knife to cut up a Boston butt. Thanks again for the info guys.
