artichoke heart soup

This is yummy.

I was at the grocery store a lil while ago and they had a salad bar in their little deli area so I bought a little less than a pound of artichoke heats to make some soup with (after seeing it somewhere on tv)

I picked up some leek, and a couple yukon gold potatoes (very small ones)


rinsed and cut up some of the leek, a few cloves or garlic and tossed it into a pan with a few tbsp of butter to saute

after the leek was softened and the garlic was aromatic I dumped a bunch of chicken stock in and the diced potatoes

just enough to cover it


brought that to a boil and then let it simmer for an hour so, then after a spin in the food processor we had a nice creamy soup

finish it with a little butter and heavy cream and salt to taste.

I used
.85 lbs of fresh artichoke hearts
2 small yukon gold potato, diced
sliced leek maybe a 1/4 cup
3 good sized cloves of garlic, minced
enough chicken stock to cover everything in the pan
pinch of dried thyme
pinch of dried parsley
~3 tbsp butter

so in a heavy bottomed pan tossed in the butter, saute the leek and garlic until softened add the chicken stock and potato added the seasoning

bring it to by a boil and then reduce heat and let simmer for an hour

puree in a food processor until smooth

finish with a couple tbsp of heavy cream and butter, serve

Sounds awesome. I'm gonna give it a shot. I've never cooked with leeks before

What do you mean by fresh artichoke hearts? Aren't the ones at the bar pickled/marinated in a brine?

I'm just curious what exactly to use if I decide to do something like this.

they were fresh, not pickled or in a brine.

I've seen them in a vacuum sealed bag and in like a "salad bar" before

just try and get ones that aren't flavored in any way

So I made a slight variation of this tonight and I'm eating it as we speak. It's fucking awesome. I used more pepper and added onions. Used less butter and skim milk. drrrrrrooooooooooooooooll

I just might try this, I love artichoke and if you substitute some of the ingredients, it doesn't sound all that bad for you either.

On a side note, Mofo, clean your freaking stove man, the place you cook off should be spotless (sorry OCD).

yea i used olive oil instead of butter and very little of it and skim milk instead of cream. other than that its just veggies and water with a little bit of spice.

Sounds good -were they fresh chokes?

I love artichokes - although, they are one of the hardest foods to pair with wine.
