I have a recipe for a Canadian cheddar cheese soup which originally said one should use bacon in it. I couldn't find chunk cuts of bacon like I wanted so I bought some pancetta. I'm thinking if I brown it and drain it, it'll work ok in the cheese soup. Have I made an error? I'll use it for something else if it sounds poor.

It might be too salty and you'll miss the smokiness of bacon, IMO
1/4 inch thick. I was going to very finely dice it.

it certainly won't make the soup taste bad - it will just be slightly different. like falhawk said, you just won't be getting the smokiness.
