Leftover chicken mousse quenelles with rice

i had leftover chicken mousse so i decided to make quenelles (football shaped meatballs)

mousse - i added a little dijon mustard

get some chicken stock simmering (mine is just water and chicken base)

add quenelles (or just make them round if you want - doesn't matter) simmer 7 or 8 minutes

when they were done i decided i wanted some color on them so i did a quick saute in butter

then i decided i wanted more color so i threw in some tomato

made some quick minute rice in the stock i cooked the quenelles and fried a couple sage leaves - the plating is shit but this was really good
