crab beurre blanc with artichoke hearts and mushrooms

very simple very delicious meal

start with a 1/4 cup of shallot finely minced, 1/2 cup of a good white wine and 2 Tbsp of white vinegar

add all this to a heavy bottom sauce pan and let the liquid reduce by about 90%

once your liquid has reduced, add 2 Tbsp heavy cream and 8 Tbsp butter, salt and pepper to taste and reserve

I decided to add some artichoke heart and mushroom but it would've been done with just the jumbo lump crab I had, so cut it up into pieces about as big as the crab

start some water boiling for our pasta

saute the mushrooms in a little olive oil

add the artichokes and heat through

right before you're ready to serve toss the crab in, we don't want to cook this much at all

toss quickly

toss everything including the pasta into the beurre blanc sauce and toss

add a little chefenade of basil and some pecorino romano and enjoy

that does look really good - next time with the mushrooms try hitting them with a little sherry at the end and let it cook off - i bet that would be good.

I didn't make up the recipe for the sauce, it's french of course its all going to be cream and butter. That's all those guys cook with.

I actually make lots of salads too, I just dont post them...nothing exciting about a bunch of mixed greens :D

the fucked up part is french people are all skinny

ive never felt heavy after eating french food even though they use cream and butter in ridiculous amounts

i can only guess its all the walking they do

At most French restaurants I've eaten, you don't feel full because portion size is well managed. If you do 3 courses you probably get the equivalent of almost an American entree.
