Beef Jerky...

That's what I'm making right now.

Standard marinade:
2/3 cup soy sauce
2/3 cup worcestershire sauce
1 tsp white pepper
1 tsp onion powder
1 tsp garlic powder

And... the standard meat:
2.25 lbs London Broil thin sliced

Marinade overnight and dry in the oven or dehydrator.

Anyone have some good marinade recipes that aren't too sweet/sticky?

On a side note... I found my old Tribes 1/Tribes 2 (Beta/Meta/Box version I played for 2 months before I moved on to EQ) and it prompted me to come back to the forums, which I can't believe are still up! I also can't believe I remembered my password to log in :P The most shocking part of it all is that there is an area for recipes on here... I like it. Hope everyone is doing well...

also, what temp do you cook it at and for how long? :)

never tried to make jerky before really, I'm sure a few have though

In the oven it should be set for 140 (with door slightly open 1-2") and the meat can dry in 6-8 hrs (it's done when it's black in color and cracks when you bend it, if it just snaps then you've dried it too long). The meat has to go on a wire rack, not on a cookie sheet and you should put tin foil or a cookie sheet under the rack of beef jerky to catch marinade drippings. If you don't catch the drippings they'll just live in your stove and smoke and make a mess.

In a food dehydrator it usually takes about 24hrs and you need to rotate the racks half way through.

Has anyone tried the box fan technique Alton Brown used? His logic is that you don't want any heat because then you're cooking the beef in addition to drying it.

I made some awesome venison jerky a year or two ago, borrowed a friends dehydrator though so it made it pretty simple. I think you can buy one at wal mart for pretty cheap.
