I made this one up last night, and it was an absolutely amazing success, warning VERY rich.
Waxy potatoes, prepare them as you please then boil them till just cooked (barely stays on a sharp knife)
Now, in a separate fry pan, fry off some diced speck with some sliced leeks till the speck has developed nice crunchy bits and the leeks are nice and soft. I fried mine off in some lard.
At the same time, boil an egg per person till just hard (12 mins approx) then cut into 1/8ths.
Lastly, combine the cooked potatoe, the speck/leek mix and the boiled eggs into a large bowl, add a little salt and pepper for seasoning, let cool a little, but not too much.
Meanwhile, the magic sauce ...
Use a whole egg mayonnaise, do NOT use miracle whip or other shit, combine this with some Crème Fraiche in a ratio of 2 to 1 (2 mayo to 1 creme) make enough to coat the potatoe mix, but not drench it. Mix this into the potatoe mix well.
Serve warm.
