[BBQ] Need some ideas

So, I recently bought a small charcoal BBQ because its easier than cooking in an oven (for me at least) and it really makes my shitty cooking skills 10x better.

So, now I'm trying to find out some good stuff to cook on it. I've just been buying random beef (I don't understand the difference between stuff really) and chicken (legs and boneless stuff)

I'm really just looking for some good marinade and some tips on prep and cooking. Recipes would be great too. I've got it fired up right now, about to put some steak strips that I marinated in some A1 Cajun stuff and some white corn with butter in tin foil.

It's really enjoyable to have a grill I must say. Its really hard to fuck up and every thing that comes off it tastes great (so far).

make yourself a container of dry rub to keep on hand. my standard mix is:

brown sugar
dry mustard
paprika
granulated garlic
onion powder
ground ginger (sometimes)

this is good to put on 24 hours before hand - it's also good for larger cuts of meat that you would braise first then grill for flavor and presentation (ribs, brisket etc)

black pepper and kosher salt i put on closer to actual cooking

low-heat in the oven for an hour or two in some sort of liquid, then when nearly cooked through, pop on the grill for 5 minutes.

and that bbq chicken in apple brine sounds great too. im going to try it on some chicken legs tonight
