Ok... So tonight I did a whole chicken in my Green Egg.

Here's all I used:

Montreal Chicken brand seasoning(just sprinkled on the outside skin)
Hot Shot black/red pepper sprinkled inside and out.
A dash of curry powder for aroma.
And the best part....a lot of fresh rosemary from my herb garden.

I stuffed a good bit of the rosemary in the chicken and it permeated the chicken perfectly.

What I'm wondering is what herbs/greens/anything can I stuff in the chicken so it permeates the meat along with the rosemary next time?

I'm not really looking for injecting spicy marinades directly into the chicken. More of a stuffing to permeate the meat.

And no... I don't want a stuffing/dressing bread crumb style recipe.

I'm looking for something new.

try some thyme, oregano, any woody herb really.

also, think about fruits, like pear, apple, mango, apricot, lemon, orange

I really like the flavor a pear imparts to chicken when it's roasted inside, yum

I've done herb roasted chicken stuffed with a citrus blend (orange and lemon) and it turns out really well. I usually stick to fresh rosemary and oregano.

Pear sounds like it would be fantastic i'm going to try that.

So I boiled the rest of the chicken the next day until it fell off the bone. I didn't eat a lot of it to begin with. I made an awesome chicken noodle soup out of it. I'll be eating it for lunch over the next week.
