[leftovers] I have baked chicken and rice

Baked Chicken (was marinated in a honey dijon dressing)
Brown Rice

What can I mix with these to make a decent meal out of it

I'm open to pretty much anything.

Easy - Mexican!

I would do Tacos - add in some black beans, cilantro, lime, chilli, make some guac if you can, throw in some salsa, little lime...you are golden.

Similar to your tacos, I was going to suggest burritos but something about honey dijon doesn't seem like it would taste good in mexican

Tacos sound good. If you have uncooked rice, you could attempt a risotto.

You could also stew it up with your leftovers, some veggies and other soup/stew essentials (bay leaf, stock, pref. herb/seasoning). I'd probably add some mushrooms, chopped celery, peppers (if I had any) to stock, boil and cook it down for a lil while with seasonings for a good stew.

how about honey dijon chicken breast with warm rice? why turn it into something else, sounds good as is.

pull apart the chicken and put it in a pita with the rice, some cucumbers and some red lettuce and a littlle taziki sauce
