Im pretty much new to the series. what are soulgems used for?

Trapping the souls of your foes to recharge magic items or enchant new ones (in the mages guild).

Cast Soul Trap on an enemy and kill it before the spell wears off. It'll be sucked into the smallest appropriate gem in your inventory (higher level foes require bigger gems). Or whack it with the Umbra sword which does the same thing.
