I have some stubbs bbq sauce but I want to make a south carolina style vinegar sauce out of it for some pulled pork. I know I have to add some vinegar, but does anyone have a recipe guide or something I can use to alter my sauce?

Isn't stubbs a red bbq sauce? In SC, they do it mustard based, so already, you're starting out wrong. If you can get it, I would recommend Maurice's BBQ sauce. It's not too bad and it's straight southern.

If you want to try and make some from scratch, here is a recipe that you might enjoy.
1/2 c. coarse ground mustard
1/2 c. yellow mustard
About 1/2 c. apple cider vinegar
3 TBS light brown sugar, packed
1 1/4 tsp chili powder
1 tsp paprika
1/4 tsp cayenne pepper

Mix all of them together until nicely blended and enjoy.

you need to make carolina clear first. that's the base of all carolina based bbq sauce. white vinegar and red pepper flake. so that's the first step.
