I just started marinating in:
garlic
shallot
fresh oregano
salt
pepper
olive oil
a bottle of petes wicked
a couple spoonfuls of my home made salsa roja (I'll post that in another thread)

no pics yet, I'll take em when I get ready to bbq later today

I've got a few options on how to serve it and I'm thinking I'll make a smashed orange cauliflower as a base for the steak then top with the creamy black peppercorn sauce and maybe a tomato tart w/ provolone cheese...or maybe some onion crisps and bbq corn

or...uh mashed potato..or maybe something else, haven't decided yet

sounds good. I hate marinating or using lots of different seasonings/rubs on my steak. all I ever use is coarse cracked black pepper and a little coarse kosher salt and cook it medium rare. I do love marinating chicken tho (it pretty much has to be marinated) and this sounds like it would be great for that. :)

<3 your cooking threads, bofo.

hey not hijack your thread or anything but since you're here I was wondering if you could help me out with dinner tonight. I'm making fish tacos and I've never made them before. You live in cali so you should know how to do them right. :) any tips?

I know I want to use some sort of cabbage and jicama topping on them. also would like to make some good avocado sauce... mmmm
