Sour cream salsa chicken for crock pot

Serves 4.

4 boneless skinless chicken breast halves
* 1 (1 1/4 ounce) package reduced-sodium taco seasoning mix
* 1 cup salsa
* 2 tablespoons cornstarch
* 3 tablespoons water
* 1/4 cup light sour cream

MOP:

Combine all ingredients except water, cornstarch and sour cream in crock pot. Set on low for 6-8 hours. Remove meat and shred with forks. Add corn starch and water to pot, stir. (if needed. Mine didn't need it.) Let cook 10 more minutes.

Add sour cream to sauce. Add chicken back to pot and gently coat with sauce. Serve in a warmed tortilla with rice.

I used bone in chicken thighs with the skin on. Cheaper that way and more flavorful, IMO.

Yes. Bounty got us a double wide for Mother's Day this year. Times are tough, man.
