But I decided to make some gumbo today as I haven't had any in a long time and I wanted to try out a new recipe. I didn't think to start taking pictures until I had already made the roux and starting sweating my vegetables, but here's how it all turned out...

Got some onions, celery, red bell pepper, garlic and carrots all mixed in with the roux. I made a pretty light roux as I was being lazy. Normally I make a dark chocolate colored roux, but this one was a caramel color.

Get some good andouille sausage browned up and ready to go. Andouille is pretty fatty so be sure to pat it down after you brown it to try to get some of the fat off.

Boil up your stock. In this case I'm just using a vegetable stock, but a good seafood stock or chicken stock work fine as well. All the better if you make it yourself, in this case I just bought some organic stock pre-made.

Once your stock is boiling, add it slowly to the roux mixture and wisk it all in. Season to taste.

For this recipe, I'm not adding the okra directly to the gumbo. If you do decide to do that, be sure to cook it first so that you don't get a stringy sticky mess.

Added my sausage to the pot. Let that simmer for a while.

Get my seafood prepped. Today I'm going with some shrimp, sea scallops and crab. Always use real crab, not the imitation stuff.

After searing the scallops, add all the seafood to the pot and let it simmer.

Today I'm going to do some fired okra and put that on top of the gumbo to give it that extra little crunch and spice. Just mix it up with some cornmeal, pepper and salt and fry in a pan using some canola oil or any oil with a high smoke point.

Ah yes, some fresh french bread. Be sure to get something with a hard crust. In this case, it's a simple baguette. I prefer the smaller pieces over the larger french loaves.

now to me that looks pretty good. I love sea food. And i love soup/stew type things. I have never heard of Gumbo before. And i had never seen seafood cooked with sausage before. That just sounds messed up. I googled it, and apparently that is a okay thing for Gumbo. But still strikes me as bloody weird. doesn't that ruin the flavour of the seafood?
