I used 17 different cheeses. Anyone who says anything other than "wow that's awesome" is admitting to being jealous of not being able to eat it.
 
Bryndza, Talaggio, Burrata, Asiago, Fontal, Motzarella (my favorite, fresh of course), Maasdam, Parmigiano-Reggiano, Pecorino Romano, Ricotta, Haloumi, Telemes, Fruilano, tiny bit of Colby and Montery Jack, Swiss and Provologne.
