I haven't played the game much, but I'm assuming that whatever you're talking about isn't an actual human (as in not a polygonal character) and therefore they did not have to capture a human doing those moves. One can animate things without motion capture or reference video.

You'd be wrong, the main character is human and does lots of tricks like this
