someone should make an intermediate guide to mining

You will need to mine Omber (Everyshore region) or Pyroexes (Lonetrek region), preferably Golden Omber or Viscous Pyroexes. These carry the highest prices in the space we have access to, and yield the most of the highest priced minerals as well.

Before you can mine you must find a place to sell. Check the Region Market for Isogen (Omber) or Nocxium (Pyro), depending on the region.and find the highest buy order that had a decent quantity over 100,000 units. Then scout out belts in the same system as the buyer or nearby systems to cut down hauling times. Use the scanner from your HUD or a survey scanner to scout for rocks. Once you find a good field, get withing range of as many rocks as possible and go to work.

Mine a litle and jettison it into a container (can), then open the can and drag it from your cargo to the can. Once you've gathered enough to fill up a hauler, or one of your own, take it to the station and refine & sell it. Also, when using the standard containers, they aren't very reliable after they have been out an hour, so if keep an eye on the clock, and timestamp your can by renaming it. If you get over 40 minutes, jettison a new can and drag everything from the old can to the new one.

That's about it. If you have weapon slots available, bring something with decent range and power so you can knock down Rats without having to move. A shield booster helps too. A good sized porn collection helps pass the time too.
 
For actual ships, I would suggest (this is for players without money)

use a crappy frigate first, equip with as many Miner I's, or EP-S gaussians and get to a belt, check for rats (you won't be able to fight any with only Mining lasers) and mine until your cargo is full.
ASAP get your races hauler (industrial ships) and do the same, but this time following Mav's advice on jet-can'ing. Next ship on the list is your races destroyer, which should have ample turrets points to allow at least 3 125mm rails (good enough for killing all rats in 0.6+) and then 2 or 3 EP-S's.

Here is the ideal loadout (at least, what works for me :p) for the cormorant (caldari) and osprey (caldari again):

cormorant:
4 * 125mm rails (I use Rail I's)
3 * EP-S mining lasers
1 * basic co-proc
1 * small shield booster
then as many cap rechargers you can get (could fit 3 if you have the CPU)

edit: this will give ~247omber/min (148m3/min) depending on your mining skill (and others)

osprey: (bare in mind I haven't actually used this yet, so I'm not sure if the drones will kill the rats)
3 * Miner II's
1 * Assault Missile Launcher
3 * basic co-proc
3 * cap rechargers
1 * med shield booster
3 or 4 * med scout drones

edit: this will give at least 420omber/min (252m3/min), and every level of cruiser will give you 20% (!!!) more

All that will fit on if you put the co-proc's on first, and all the cap rechargers will allow you to recover 305 cap/min

If you want to go all mining because you have friends to take out the rats you can do this with a destroyer.

Cormorant

4 x EP-S mining lasers
1 x XECL mining laser
1 x co-processor
 
Miner II's don't work on a destroyer, they suck up 90 eng per min - my cormorant can run 2 at the same time, 3 gives me about 3 mins before deactivating

Cap / Cap recharge time = eng per sec
eng per second * 60 = eng per minute

basic cap rechargers give you -15% recharge time, and with my dest i couldnt fit enough to get 3 Miner II's going
