can someone explain what is going on when Legolas grabs onto that white horse, as the wolves are all running towards Legolas and his friends.

It's very simple. The horse symbolizes a giant wad. Legolas is clearly gay since he is embracing the wad. Unless, of course, he is just a big masturbator.
 
Legolas had a smashed rib, and couldn't properly jump onto the horse. So they CG'ed a goofy elf jump.

As far as anything else, I dunno.. maybe he felt it would be good to ride into attack on a horse, versus not on a horse? Got me. Fucking fantasy films. Who can figure that shit out..
