I'm about to make egg salad

I have 2 eggs left in a container, one of them is off color- a little brown. is it ok to eat?

and i have another container that says- best if used before feb.11- should I use an old egg or a brown one?
 
brown eggs come from a brown chicken, if it was originally white then i wouldn't use it.

i belive there ok to use a few weeks after the expiration date.

there is a method to test egg freshness by putting them in water.
 
what method would that be?

and it's not a "brown egg" its a brownish white egg, i dont know if it was white at one point.

To test an egg's freshness:

Place the egg in a pan of water.



Recipe




If fresh, it will lie on its side.

If a few days old, it will tilt upwards.

If stale, it will stand on end.

If very old, it will float and you need to throw it out.

they are probably fine, if they aren't, you'll know when you open them.

YOu know what will turn you off from eggs for like ever? Find an egg that has a half developed chick inside. I cracked it over a pan once and it was all bloody and had a shriveled little chick in it. that was fucking gross.
